Ingredients

  • 1 scoop chocolate protein powder
  • 1½ tablespoons almond flour 
  • 1 tablespoon cocoa powder
  • ¼ teaspoon baking powder
  • 3 tablespoons unsweetened almond milk or milk of choice
  • 1 tablespoon maple syrup 
  • 1 tablespoon melted coconut oil or neutral oil
  • ½ teaspoon vanilla extract
  • 1 teaspoon mini chocolate chips
  • ¼ cup diced strawberries, optional

Instructions

  1. Whisk together chocolate protein powder, almond flour, cocoa powder, and baking powder in a large microwave-safe mug.

  2. Add the milk, maple syrup, oil, and vanilla. Stir until the batter is smooth and glossy with no visible dry pockets.

  3. Gently fold in the chocolate chips and half of the sliced strawberries, if using.

  4. Microwave on high for 45 to 60 seconds, until the cake is just set on top and still moist in the center. 

  5. Top with remaining strawberry slices. If desired, garnish with powdered sugar, a spoonful of whipped cream, or extra chocolate chips. Let cool for 1 minute before enjoying.
