Raspberry Chia Pudding Parfait

Ingredients

  • 1-½ cups unsweetened almond milk or milk of choice
  • 1 scoop Naturelo vanilla protein powder
  • 1 scoop Naturelo unflavored collagen peptides
  • 2 tablespoons maple syrup, divided
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup plus 1 tablespoon chia seeds
  • 1 tablespoon ground flaxseed
  • 1-½ cups fresh or frozen raspberries
  • 1 teaspoon lemon juice
  • 1 cup plain or vanilla non-fat Greek yogurt

Instructions

  1. In a medium bowl or jar, whisk together the almond milk, protein powder, collagen peptides, 1 tablespoon maple syrup, vanilla extract, and sea salt until smooth. Then, stir in the chia seeds.
  2. Cover the chia pudding and refrigerate for at least 2 hours or overnight. Stir the mixture once after the first 15 minutes to prevent the chia seeds from clumping. 
  3. Before making the parfaits, combine the raspberries and remaining tablespoon of maple syrup, and lemon juice in a bowl. Gently mash the berries with the back of a fork.
  4. Divide half of the chia pudding between two clear glasses or jars. Top with the mashed berries and yogurt, then the remaining chia pudding. If desired, garnish with fresh raspberries, freeze-dried berries, or mini chocolate chips.
